I had the opportunity to attend a Bizcocho masterclass with Chef Alex, (I’ve followed and learned from him online for nearly five years.) I made the drive from Chandler, AZ to Duarte, CA specifically to attend this class, and it was absolutely worth it, exceeding every expectation! Although I have baking experience and have made conchas before, my goal was to gain a deeper understanding of the science behind baking, the why, not just the how. This masterclass delivered exactly that. Using one base recipe, Chef Alex taught how to create five different Mexican sweet breads, while clearly explaining the history and science behind each variation. Chef Alex’s depth of knowledge, experience, and passion for teaching were evident throughout the class. His explanations were clear, thoughtful, and practical, making complex concepts easy to understand and apply. The learning environment was welcoming, educational, and well-organized. His assistant Yvonne deserves a shout out and, as she made sure everything flowed effortlessly and efficiently, Thank You, Yvonne! As someone who has recently opened a home bakery, this class has been incredibly valuable. I’m excited to apply what I learned and expand the variety of breads I offer to my customers. I’m very grateful for the experience and look forward to taking more classes with Chef Alex in the future.

Chef Alex’s classes are top notch. I wouldn’t call myself a pro baker by any means but I felt like one after taking The Baking Evolution classes. So far I’ve done the concha class and the galleta class. I loved both for different reasons, but the best part was getting to eat and share the delicious products. I highly recommend these baking classes to anyone with even a small interest in Mexican baking. You will not be disappointed!

We had a very positive experience taking the concha class with Chef Alex . He is an excellent instructor and ensured we understood each step so we could recreate the bread at home. The class is well organized and assisted and we discovered techniques for perfect bread that we hadn’t been able to figure out from watching other people’s Mexican bread videos online. Fully recommend making the drive to take the class in person!

Chef Alex and his assistant are amazing! I joined his Concha Masterclass and it was a great learning experience and more! I'm excited to join more classes in the near future. There's nothing better than a hands on in person experience with a great Chef! I learned so much down to every product. Chef Alex is a great Teacher. Now I know why every class at Baking Evolution is always booked, took me 4 months to find an opening for the class I wanted to enroll in "Bolillio y Telera" Masterclass. Chef Alex is very thorough when presenting his class, learned alot in the class with all the hands on training, he also taught us how with 1 dough you are able make a variety of baked goods from pretzels, laminated, and cinnamon rolls. I enjoyed it soO much that I signed up for the "Bizzcho y Concha" Masterclass
