When he was living in West Africa, agricultural engineer Claudio Corallo found forgotten cacao trees on the islands of São Tomé & Principe. He had finally met with his destiny. And for more than 30 years now, he's been growing biodynamic cacao beans and making matchless chocolate - an inspiring bean-to-bar success. The shopkeeper was very knowledgeable, warm, and passionate - I believe a business partner, who was actually planning his next trip to São Tomé. He had us taste numerous samples, a fireworks of flavors. I loved the bar with Liberica coffee, and I also recommend the chocolate covered roasted coffee beans. The bar with sugar crystals is a mystery of powerful dark chocolate with a soft finish. They also had my favorite sugarless treat but hard to come by: raw (and roasted) coca nibs. Prices are high but you're paying for rare quality and it all goes to the producer and his team.
We came across this place while walking in downtown Palo Alto. It's one of the best fine chocolates in bay area. They've free tasting and we got to try the hot chocolate. If you're a chocolate lover, this is a place for you! Just cocoa beans and you've an amazing chocolate.
The beans themselves were amazing. but it seems they don"t know how to do the chocolate tempering(you would see the marble patterns on the chocolate surface). It causes the texture of the chocolate to be grainy. I feel like it's a bit pricey for the quality.
