I walked in exactly when they opened, was greeted, and given the choice to pick from any seat in the house. The space was beautiful, warmly lit, and the gigantic wood-fire pizza oven, in particular, took center stage. Of the fine Neapolitan-style pizzas on the menu I decided on the "Napoli" as a baseline. It came out on a wooden platter with a serving knife and a variety of olive oil for drizzling. Everything was cooked just-right: the Fior di Latte mozzarella melted into the sauce holding the basil in place. It was immediately edible, not too hot. The sauce had a slight sweetness and contrasted well with the cheese. The crust was puffy and crisp, with a dappled char characteristic of this style of pizza, yet had a pleasant chew and taste on its own. The slower I ate it the more I enjoyed it. The owner actually brought over some of their oil & balsamic dipping sauce and suggested using it with the crust, which I gladly obliged. It was really nice. We ended up chatting about the restaurant's philosophy and the pizza dough (they incorporate a biga pre-frement over a multi-day process). The staff seemed to be enjoying the evening as well--at one point the pizzaiolo was even singing for a moment. I ended the meal with an affogato, simple and delicious. It was honestly a hard choice given the assortment of dessert options. Definitely a gem in the Seattle pizza scene. I'll be coming back for sure and wish them luck.
Having recently moved from Europe, I was on the lookout for a pizza in Seattle that came close to the Neapolitan pizzas there. Capitale Pizza didn’t disappoint. We tried the bruschetta trio, the flavours of which our server explained to us to contextualise their preparation origins. We had the Napoli and Madrid pizzas, both of which were rich and flavourful. I had half of my Napoli pizza the next day, and the air fryer reheat instructions were on point and it was as fresh as the evening before.
Had the SRW menu which was way more food than we needed but a great way to try the menu. Portions of the first course apps were surprisingly large so definitely value here and enjoyed the Neapolitan style pizza. There’s a ton of combinations for any palate. Dessert was also good size and could’ve been split, 10/10 pistachio tiramisu. The salmone salad was also surprisingly delicious and could’ve been an entree! Had a couple glasses of wine and overall would return. It was surprisingly quiet for a Thursday evening, the resi didn’t de necessary.
Sheesh! I've had the unfortunate displeasure of trying many a pizza place in Seattle, mainly from the preferences of my corporate overlords. Capitale came as a recommendation from a trusted source, and the source's trust has expanded!! My appetizer was the Salmone which was way tastier than it had any right to be. A proper sleeper! Maybe I'm just ignorant but salmon strawberry is a legitimate combo. There's something about a nice pizza that's just satisfying. The dough...texture...flavors. It's all there! The Santiago's multi hour stewed meat topping definitely had that meaty, savory, and juicy flavor that can only be obtained from stewing in its own juices for many hours. Finally, I loved the pistachio tiramisu! A heaping filling to top off the meal. The ultimate compliment - not too sweet. Did I mention that the host and owners were super personable? I don't speak a lot of Italian but I know when it's being spoken around me and I truly believe that it adds to the environment in a flavorful way. 5/5
