I ordered the sashimi combo and was blown away by the quality and presentation. Brian, the GM, personally helped with recommendations and made sure everything was perfectly suited for a gluten-free and dairy-free meal — a level of care you can appreciate. Thanks to his recommendations, I added 2 standout pieces of mackerel: Aji and Saba, both incredibly fresh and beautifully balanced in flavor. The friendliness of the sushi counter chefs and the front desk team deserves a special mention — warm, welcoming, and truly passionate about what they do. Even picking up takeout felt like stepping into a luxury dining experience. I’ve dined in before and the environment is just as impressive: elegant, serene, and buzzing with culinary artistry. What an experience. We were planning to do the set chefs omakase but our waitress talked us into a custom one created by her and wow!! So incredibly amazing. From the get-go Erica, our waitress, was warm and knowledgeable and made it such an adventure for us, she was really intuitive on what we were looking for and we couldn’t be happier. The food was absolutely delicious, if you have the chance, and are open-minded to try new food, we highly recommend trying the omakase.
We tried Matsuhisa for the first time on 11/29 and while we had no reservations, the hosts were nice enough to take us as walk ins and seated is at the sushi bar. Food and service outstanding. In addition to an assortment of various standard rolls and nigiri, of particular note were the crab spring roll which was absolutely delicious and the crispy rice with tuna—fun take that allows you to build your own! Service was also excellent, as was the conversation with sushi chef Alex, who explained all about their specials, various info about the world of a sushi chef, and just overall great hospitality, all while making complicated orders all evening! We frequent sushi restaurants wherever we travel and Matsuhisa is among the best anywhere!
If your into the symphony of 9 course meals this place is my go-to, everything tasted perfect, the chefs choice omakase definitely opened my eyes to exemplary and extremely well thought out, perfectly executed courses, wonderful food. Pricing is expensive but you not only pay for the experience, but the flavour profile, and the memories it creates. I didnt think with the amount I eat that 9 small courses would fill me but they were perfectly timed around us, and with the meals they serve, its better to slow down and enjoy the meal and experience what makes this place the best in Denver. I dont remember my waiters name but I very much appreciated that he stopped by frequently enough to make sure we were good but not be annoying; and him being help for the bar made his drink choices very expertly picked. All in all a 10/10, will definitely be stopping by again.
I ordered the omakase and highly recommend sitting at the sushi bar for it. We chose a sushi omakase instead of the hot dishes omakase. The chefs were incredibly kind and friendly, especially one of them shared their homemade me wine which was delicious. Our waitress was also incredibly attentive and ensured we had a great time!
