Project BBQ is a lively barbecue restaurant located on the iconic Fremont Street Experience in Las Vegas, offering a unique dining experience right next to live music stages. We serve up classic smoked meats like ribs and brisket, alongside sides such as baked beans and mac and cheese, in a fast-casual setting with standing bar tops. Perfect for tourists and locals alike, we combine great food with the electric atmosphere of downtown Vegas, though seating is limited and it's more about the vibe than a sit-down meal. Come for the flavors, stay for the entertainment!
Our second visit.. Soo good! Alex greeted us, answered some questions and suggested the brisket grilled cheese. Great sandwich. Just enough cheese, crispy toast and of course, the brisket! It's at the end of Fremont street but worth the trip. Nights you are right next to one of the stages so you can eat and enjoy the music.

Not often I’ll brag about baked beans but these are on point! Ribs were good, filet kebabs were cooked perfect med rare. Cole slaw is bland. Good fast service and fast food delivery to your standing position. Standing dining & no booze. - drinks easily accessible from circa bar over the rail. Live music stage 8pm was a great dining experience - not a sit down dining experience
We visited for dinner on a Thursday evening. There was no wait. The people behind the counter were very friendly and professional. We were able to use our Club One comp and food credits here. The portions were decent. Flavor was good but, could use some love and depth. I love the standing bar tops and location. You are near a stage and feel like you are still in the action. You have access to a bar in the same area with great drinks! My only complaint was the monkey bread. It looked amazing on the advertisement; so we decided to get one. The flavor was good but, the Carmel drizzle and pecan topping were non existent. If it had been served as shown, this would have knocked it out of the park!
Unfortunately, our experience at this rib restaurant was very disappointing. It’s located on Fremont Street, right in front of the stage, between Circa and Golden Gate. Prices are high — likely due to the touristy location — but the food simply isn’t worth it. The ribs were dry, flavorless, and had a strange texture. The mac and cheese didn’t taste like anything — we honestly had no idea what we were eating. Everything lacked seasoning, depth, or any real flavor. On top of that, there’s no comfortable seating and the heat is overwhelming. I do not recommend this place. If you still decide to try it, go with very low expectations. There are far better food options in Las Vegas. Don't let the pictures deceive you, food wasn't good.
