Excellent online Zoom course! Alex is a very knowledgeable, experienced baker. His background in baking and his passon and love for his culture are evident in his work. He published his cookbook recently, The Mexican Bakery, which I'm excited to explore! Thank you, Alex for a great experience and for being helpful with my questions during the class. It has been a pleasure baking alongside the great chef, Alex. He brings years of experience and personal wisdom directly to home cooks. For me, having this experience firsthand and live was unlike any other class I've attended. Meticulously and with great passion, the chef shares his love and dedication by recreating these recipes steeped in tradition and culture before his audience. More than anything, I appreciate that he not only has the patience to answer every question, but also provides a wealth of historical education through the roots of these creations. I had the opportunity to attend a Bizcocho masterclass with Chef Alex, (I’ve followed and learned from him online for nearly five years.) I made the drive from Chandler, AZ to Duarte, CA specifically to attend this class, and it was absolutely worth it, exceeding every expectation! Although I have baking experience and have made conchas before, my goal was to gain a deeper understanding of the science behind baking, the why, not just the how. This masterclass delivered exactly that. Using one base recipe, Chef Alex taught how to create five different Mexican sweet breads, while clearly explaining the history and science behind each variation. Chef Alex’s depth of knowledge, experience, and passion for teaching were evident throughout the class. His explanations were clear, thoughtful, and practical, making complex concepts easy to understand and apply. The learning environment was welcoming, educational, and well-organized. His assistant Yvonne deserves a shout out and, as she made sure everything flowed effortlessly and efficiently, Thank You, Yvonne! As someone who has recently opened a home bakery, this class has been incredibly valuable. I’m excited to apply what I learned and expand the variety of breads I offer to my customers. I’m very grateful for the experience and look forward to taking more classes with Chef Alex in the future.

I have been to all of the "hand on" classes. Chef Alex has made "pan dulce mexicano" accessible to all home bakers. His expertise and love of traditional family baking resonates and shines in all the baked goods he teaches us to create.
