We went to Cut & Bourbon for lunch and had a great experience. Since it wasn’t a game day (it’s right in the middle of the Arlington sports district), it was calm and not crowded, which was perfect for us. Valet at the hotel made arrival easy, and you walk straight into the restaurant, which is a big plus for accessibility. My dad uses a walker, and everything about the entry and layout felt thoughtful and easy. The space itself is open, bright, and welcoming, with lots of natural light. There’s a great view of the outdoor patio and fountain. We sat inside by the window and loved the atmosphere — upscale but still relaxed. Service was excellent from start to finish. The hostess was warm and welcoming, and our waitress, Gabby, was fantastic — super attentive, friendly, and completely on top of everything without hovering. Excellent. Food and drinks were spot on. The old fashioned was solid, the wine selection was great, and the charcuterie board had a nice variety. We also had the Cobb salad, shrimp bucatini pasta and the shrimp were good size and well cooked, and the artisan bread appetizer… and honestly, that butter deserves its own paragraph. You could absolutely eat it by itself. I mean... I did. No regrets. I know this place seems to average around a 4.4-star rating, but from our perspective, it was a total win — food, service, atmosphere, and location. 5 stars for sure. We were thoroughly happy with our dining experience and will definitely be back.
From the moment we sat down, this restaurant delivered an exceptional experience—but the true standout was Nikia. She absolutely knocked it out of the park. Her recommendations were spot-on, her timing was flawless, and she handled my food allergies with confidence and care, which instantly put us at ease. Thanks to her guidance, we enjoyed an incredible lineup of appetizers: rich, decadent bone marrow; delicate and perfectly balanced Wagyu carpaccio; warm, indulgent baked Brie; and scallops that were cooked beautifully. Every dish felt intentional and expertly prepared. Dessert was the perfect finale. The crème brûlée had that ideal crack of caramelized sugar, and my wife’s layered carrot cake was moist, flavorful, and memorable—one of those desserts you keep talking about afterward. The hospitality didn’t stop there. Tatianna, the manager on duty, was warm, attentive, and clearly sets a high standard for service, and Gabriella was a fantastic secondary server who made sure everything flowed seamlessly. It truly felt like a team effort, and it showed. We appreciated everyone who contributed to such a wonderful evening. Merry Christmas to you all—we’ll absolutely be back.

Everything all around was really good. I must say though, that a grilled steak at home is just as good as grilled steak here. But I must say, the scallops, octopus, and sides are outstanding. The service was above par, which speaks to the training the staff receive. We will definitely return. Upscale, not pretentious, and exceedingly well run.
I've been here several times now, and we've always enjoyed it. The menu is a bit pricey, and I've preferred some menu items over others, but I've tasted enough of what they offer to know what to order when I visit. They have a beautiful, spacious patio too that provides great views of the water features and the Death Star. The staff is very friendly, from the host staff, servers, and the managers. The staff seems to genuinely care, which is uncommon in many restaurants these days. They are always extremely accommodating, and they go out of their way to ensure that you enjoy your experience. Valet is complementary, as long as you remember to validate your ticket.
