This is a great place to eat. I started coming here for their Pho and they recently updated their menu. The grilled pork vermicelli is delicious! They have a cute set up and you can tell that they really care about providing good service to their customer. I feel like I’m eating someone’s home cook meal and was invited over for dinner. I’ve been there several times and it has become one my favorite spots to get away and enjoy a good meal.
I'm a huge fan of Pho 63 and was surprised by the their, hopefully temporary, closure. I'd seen Viet Vibes when drivig down Kramer a few times and i woke up to the perfect weather for noodle soup! The parking lot was full so i had to park in the front and walk. Its great to see this food truck park have such a good flow of customers. The truck is tucked away behind a platice tent, that did a great job keeping the wind at bay today. I ordered the bun bo hue and an egg coffee. I had never had egg coffee and i was honestly blown away by the creaminess and lovely spiced complexity of the egg foam. Sipping on the foam then drinking the coffee through the straw was a nice way to start off the drink. The bun bo hue came out shortly after and it was perfectly, piping hot. The broth was nice and rich on its own but i still added a couple spoon fulls of sate that was at the table. In the soup was a good amount of noodles, about 4 or 5 slices of wagyu beef, 3 slices of sausage, a boneless trotter, only 1 piece of blood jelly 🥲, and a meatball that reminded me of what is served with bun rieu. It was amazing! I will 100% be back. I need more of that coffee and soup. The one thing i wish Viet Vibes had that Pho 63 did, is the shrimp paste that some folks use in bbh.
Me and my sister visited Viet Vibes Kitchen today and they did an excellent job! The food was absolutely delicious — the Rib Pho was rich and flavorful, the Bun Bo Hue had the perfect balance of spice and depth, and the Egg Coffee was a must-try treat. The staff were friendly, and the atmosphere was warm and welcoming. Highly recommend this spot if you’re craving authentic Vietnamese flavors. We’ll definitely be coming back!
I just tried their dessert this time. It wasn’t too sweet, which I like. it was yummy. I’ll try more dishes on the menu during my next visit. They also have nice outdoor seating if the weather isn’t too hot.

You can tell they took great care and grilled their meats for their Banh Mi, spring rolls, and the vermicelli (bun) dish to perfection. The meat was well seasoned and was juicy. Their pho was tasty, you can smell the spices they steeped in their stock/broth. Their portions were also generous. Their drinks were refreshing and not overly sweet like you see at some places (Thai Tea and Milk Coffee). The fresh juices were also light and refreshing especially on a hot day. I was a little sad that I wasn't able to try out their egg coffee or their coconut coffee but I'm looking forward to when they are fully open so I can them and their Bun Bo Hue.
