I went here when I first moved to Hamilton 3 years ago and didn't go back until a few weeks ago. What a mistake and I can't believe I forgot how great the food is here. I would highly recommend adding CIMA to the list of restaurants to try in Hamilton as the food is fantastic. The wood fired pizza is one of the best in Hamilton and it was perfectly cooked. The Tagliatelle ai Frutti di Mare had a great balance of taste and the pasta was perfectly cooked with a good amount of seafood. The nutella bombolino is too dangerous and was an incredible finisher to the meal. Highly recommend this spot, and may be the best restaurant on Locke for me.
The restaurant offers a refined atmosphere and attentive service, with clear attention to authenticity. The Fungi pizza with prosciutto carried an appealing wood-fired aroma, yet the overall flavor balance was not entirely pleasant. The char reached a level where the smoky-burnt notes dominated the palate, and the drizzle of truffle-infused oil —though luxurious in concept— further amplified the bitterness instead of enhancing the natural flavors. As a result, the delicate earthiness of the mushrooms and the subtle sweetness typical of a well-fermented Neapolitan dough were lost beneath the intensity of the smoke and truffle oil. The tiramisu, on the other hand, was a highlight —a refined reinterpretation that felt light, aromatic, and beautifully balanced, with a touch of amaretto and toasted hazelnuts adding texture and contrast. Unfortunately, a couple of hazelnuts tasted rancid, slightly disrupting an otherwise excellent dessert. Overall, the experience reveals genuine craftsmanship and creativity, though better control of flavor balance and finishing touches could elevate it from good to truly exceptional
We started with the calamari fritti and lamb skewers. The calamari came out golden and crispy, but all the flavor was in the romesco sauce which really carried the dish. The lamb skewers had great garlic and rosemary seasoning with pink peppercorns, though the meat leaned a little dry. The pastas were impressive. The gnocchi al tartufo was pillowy soft with a rich truffle cream that I really enjoyed. The casarecce alla Gigi, even without pancetta, was excellent. The rose sauce was flavorful and the pasta was perfectly al dente. The Margherita pizza was a standout. The edge crust had the perfect char while the center stayed soft and the balance of tomato, mozzarella, and basil felt spot on. A drizzle of chili oil took it to the next level. We ended with tiramisu in a jar which was a lovely finish. It had light layers with subtle flavors and the crunchy hazelnuts on top gave it a nice texture. Service was great throughout and Erika really helped with choosing the dishes and made the experience even better. Overall the meal felt well rounded with some highlights, great presentation, and balanced flavors.
We got a chance to try CIMA Enoteca this past weekend. Very nice, clean restaurant with an industrial feel. The service was great and very friendly. We ordered the fried calamari to start, it was ok, it didn’t taste like it was fresh, a little rubbery. The pizzas were amazing, the sauce was light and nicely seasoned, the cheese and toppings were a good amount and were high quality. The crust was excellent, very airy, crispy and simple. Overall it was a very good first experience at CIMA, I would definitely recommend you check them out if you are in the area or looking for a great new pizza to try.
CIMA on Locke Street is hands down one of the best pizza spots I’ve ever been to! 🍕 I ordered the Margherita pizza, and I genuinely can’t stop thinking about it—easily the best pizza I’ve ever had. The dough was absolute perfection: light, airy, slightly chewy with that perfect wood-fired crisp. You can really taste the quality and care in every bite. What blew me away even more? You can actually buy their pizza dough to take home! It’s that good—they know people are going to want more of it. The atmosphere is cozy and stylish, with a welcoming vibe that fits perfectly with the charm of Locke Street. Friendly staff, great service, and top-tier ingredients—this place is a must-visit whether you’re local or just passing through Hamilton. Can’t wait to come back and try more! 🍅🧀🔥
